Not only that, but it takes less than 10 minutes to make! Easy peasy! I usually keep a bag of spinach in the refrigerator so I can whip this up. You can always just put the frozen spinach in a strainer and run it under hot water to thaw instead. For a twist, add crumbled bacon
12 ounce bag frozen spinach(Thawed and Drained)
3 Tbsp. butter
3 ounces cream cheese (check carb counts on cream cheese!)
1 teaspoon heavy cream (may use more or less depending on how much moisture you want)
1 Tbsp. Dried Chives (may substitute fresh)
4 ounces cheddar cheese or Monterey jack cheese, shredded, 1/2 cup
Garlic Powder to taste (I use 1-2 Tsp.)
Salt and pepper, to taste
Melt the butter in a saucepan on low heat; add the cream cheese and stir until melted (it may look lumpy). Add the spinach and chives and just heat through. Add the cream, cheddar, garlic powder and salt and pepper. Gently stir until the cheese melts and coats the spinach; serve hot and devour!
