The Weekender

We call it the weekender because we make it on the weekends and pretty much nibble off of it all day while doing stuff around the house.

1 lb/tube of breakfast sausage, we use a maple flavored one not too high in carbs from Jimmy Dean.
5 large eggs
1 1/2 cups fresh spinach
1 can Rotel, or 1 cup of diced tomatoes and chili peppers
1 cup shredded cheese, we use colby jack but any will do
salt and pepper to taste.

1 large nonstick oven safe skillet

Preheat oven to 400
Cook whole tube of sausage, breaking up as needed. You want small sized pieces for even distribution through out the dish.
Leave fat and meat in skillet and add drained tomatoes and peppers if using can or just add them in if using fresh. Stir in well. Add spinach and mix until wilted down.

Mix eggs and cheese in separate bowl. Add salt and pepper then pour mix over meat mix. Shake and lightly stir to get eggs all the way down to the bottom.
Place in oven for about 10-12 minutes.

Remove and let stand 5 minutes or so to become more sturdy.
Slide it out and slice like a pizza.
